1 cup boiled sweet corn, 2 tablespoons finely diced carrot, 2 tablespoons finely diced capsicum (bell pepper), 2 tablespoons finely chopped cabbage, 1 teaspoon minced garlic, 1 teaspoon grated ginger, 1 tablespoon cornflour, 3 cups vegetable stock or water, salt to taste, ½ teaspoon black pepper powder, 1 teaspoon soy sauce, and 1 teaspoon oil or butter.


Preparation Method


To prepare the sweet corn soup, start by heating oil or butter in a pan. Add the minced garlic and grated ginger, sautéing them briefly. Then, incorporate the carrot, capsicum, and cabbage, cooking for 2-3 minutes. After that, mix in the boiled sweet corn.


Next, pour in the vegetable stock or water and allow the mixture to simmer on low heat for about 5-7 minutes. In a separate bowl, combine the cornflour with a small amount of water to create a slurry. Gradually add this to the soup while stirring continuously to avoid lumps.
