Savor the Zesty Soya Chaap Curry

If you're looking to break free from the monotony of everyday spinach, eggplant, and potato dishes, this Soya Chaap curry is an ideal option. It's simple to make at home and offers a delightful taste. You won't need any fancy ingredients—just some Soya Chaap and a handful of spices—to create a mouthwatering dish in about 10 to 15 minutes.

Culinary expert Durgesh Pandey recommends Soya Chaap as a fantastic substitute for vegetarians tired of paneer. Start by purchasing 300 grams of Soya Chaap, which serves three people. Remove the sticks, wash the pieces thoroughly, and cut them into bite-sized chunks. Fry these pieces in either refined or mustard oil until they puff up slightly and turn golden brown. Be cautious not to overcook them; the goal is to eliminate the raw flavor without making them hard or crispy.

Enhancing Flavor with Tomatoes

According to Durgesh Pandey, once the raw taste is gone, take the Soya Chaap out of the oil. Finely chop three to four onions and prepare a tomato purée along with a ginger-garlic paste. Heat some mustard oil in a pan, add the ginger-garlic paste, and sauté briefly. Then, add the chopped onions and cook until they reach a golden brown color. Once the onions are well-cooked, incorporate the tomatoes and salt.

Perfecting the Masala
Durgesh Pandey emphasizes the importance of cooking the mixture until it forms a smooth, well-blended paste. At this point, add red chili powder, garam masala, turmeric powder, and coriander powder, and continue cooking. Stir the mixture until the masala starts to release oil. Once the masala is cooked to perfection, add a little water while stirring, then mix in the special 'soya chaap masala' designed for this dish. Cook this thoroughly. If desired, you can add green peas (frozen peas are acceptable); however, it's not a requirement.

Simmer for 10 Minutes
Durgesh Pandey suggests adding the previously fried chaap back into the pan and allowing it to cook thoroughly. Let it simmer for about ten minutes so that the spices infuse deeply into the chaap, enhancing its flavor. Once done, garnish with fresh green coriander and serve.
