If you're tired of the usual biscuits, savory snacks, or rusks, it's time to switch things up. Today, we present a delightful and quick recipe for Sooji (Semolina) Rings.



This snack is wonderfully crispy on the outside while remaining soft and tasty on the inside. The best part? You won't need to purchase any special ingredients; everything you need is likely already in your kitchen.


**Ingredients for Sooji Rings**
1 cup Semolina (Sooji)
1.5 cups Water
2 Boiled potatoes (well-mashed)
1 teaspoon Cumin seeds
1 teaspoon Chili flakes
1-2 Green chilies (finely chopped)
Salt (to taste)
2 tablespoons Fresh coriander leaves (finely chopped)
Oil (for frying and a little for the dough)


**Simple Steps to Prepare Sooji Rings**
Begin by heating water in a kadhai (wok) or pan. Add a bit of oil, salt, cumin seeds, and chili flakes. Once the water reaches a boil, reduce the heat and gradually stir in the semolina to avoid lumps.


When the semolina has absorbed all the water and thickens to a consistency similar to *halwa*, turn off the heat. Transfer the mixture to a bowl and allow it to cool slightly.
Next, incorporate the mashed boiled potatoes, finely chopped green chilies, and fresh coriander into the warm semolina mixture, mixing thoroughly. Knead the mixture with your hands to create a smooth dough. If it becomes sticky, add a little oil.


Take a sizable ball of dough and roll it out into a slightly thick sheet using a rolling pin. Use a bowl or large lid to cut out round shapes. Then, use a smaller lid to create a hole in the center, giving it a ring or doughnut shape. Repeat this process with the remaining dough.


Heat oil in a pan. Once hot, lower the heat to medium and carefully add the semolina rings one at a time. Fry until they are golden brown and crispy on both sides.
