**Recipe for Singhare ke Aate ki Barfi**

Total Time: 20 mins
Preparation Time: 5 mins
Cooking Time: 15 mins
Course: Dessert
Servings: 2 people
Cuisine: Indian

**Ingredients Needed for Singhare ke Aate ki Barfi:**

Water chestnut flour (*Singhara atta*): 1 cup
Sugar: 3/4 cup
Desi Ghee (clarified butter): 3 to 4 tablespoons
Water: 2.5 cups
Cardamom powder: 1/2 teaspoon
Chopped dry fruits: 2 tablespoons

**Instructions for Preparing Singhare ke Aate ki Barfi:**

Begin by greasing a plate or tray with a bit of ghee to ensure the *barfi* can be easily removed once it sets.

In a bowl, mix the water chestnut flour, sugar, and 2.5 cups of water. Stir well with a whisk or spoon until you achieve a smooth batter.

In a *kadai* (wok), heat 2 tablespoons of ghee and pour in the flour and water mixture. Maintain medium heat and stir continuously to avoid sticking.

Keep stirring without pause, as the mixture will thicken quickly as it heats.

After about 5 to 7 minutes, it will become thick and shiny, similar to *halwa*, and will start to pull away from the sides of the *kadai*.

Once thickened, add the cardamom powder and the remaining tablespoon of ghee, mixing thoroughly. Turn off the heat and transfer the mixture to the greased plate, spreading it evenly with the back of a spoon or a small bowl.

Top with finely chopped cashews, almonds, and pistachios, pressing them gently into the *barfi*.

Let it cool for 15–20 minutes. Once set, cut it into your preferred shapes. Your water chestnut flour *barfi* is now ready to enjoy.
