This dish is particularly famous in the dhabas of Rajasthan and Madhya Pradesh, often prepared with a tomato-based gravy. In some variations, milk is also added. Ingredients Required

2 cups gram flour
¼ teaspoon turmeric
1 teaspoon Kashmiri red chili powder
¼ teaspoon carom seeds
½ teaspoon salt
2 tablespoons hot oil
½ cup water
Oil for frying


Preparing the Spice Paste

2 teaspoons oil
1 chopped onion
3 cloves of garlic
1 inch ginger
½ cup grated dry coconut
¾ teaspoon Kashmiri red chili
1 teaspoon garam masala
¼ teaspoon turmeric
¼ cup water


Additional Ingredients

2 tablespoons oil
3 cups water
½ teaspoon jaggery
½ teaspoon salt
2 tablespoons finely chopped coriander


Making the Spicy Sev

While you can buy sev from the market, nothing beats the taste of freshly made sev at home. Start by mixing gram flour, turmeric, Kashmiri red chili powder, carom seeds, and salt in a bowl. Combine these ingredients well. Then, add 2 tablespoons of hot oil to the mixture and mix thoroughly.


Next, knead the mixture by gradually adding water until it reaches a soft consistency. Ensure the dough is not too wet; it should not stick to your hands. To prevent sticking, apply some oil to your hands while kneading.


Now, take a sev maker, grease it lightly, and fill it with the gram flour mixture. Squeeze out the sev into hot oil, ensuring they do not overlap. Fry until golden and crispy, flipping them halfway through.


Preparing the Bhaji

To make the Sev Bhaji, heat 2 teaspoons of oil in a pan. Add the chopped onion, garlic cloves, and ginger, sautéing until golden brown. Then, add the grated dry coconut and roast until it turns golden over medium heat. Allow the mixture to cool before blending it into a smooth paste.


In the blender, add red chili powder, garam masala, and turmeric. Blend until the mixture is thick. In a hot pan, add 2 tablespoons of oil and pour in the blended mixture. Cook until the spices release oil from the sides.


Next, add water, jaggery, and salt, adjusting the consistency as needed. Let it simmer for a while, then stir in the chopped coriander. Your Sev Bhaji is now ready to serve. Dish it out in a bowl, garnish with spicy sev and fresh coriander, and enjoy it with roti, chapati, or pav.
