Sesame Revdi Recipe: This traditional sweet, crafted from sesame seeds and jaggery, is especially cherished during the colder months. Alongside sesame ladoos, Revdi is a favored winter treat that helps maintain body warmth. Packed with calcium, iron, and healthy fats, Sesame Revdi is known for its benefits in strengthening bones, enhancing digestion, and boosting immunity.
Sesame Revdi is a beloved sweet, particularly prepared in winter. Its popularity stems not only from its delightful taste but also from its energy-boosting and warming qualities. The nutritious blend of jaggery and sesame seeds, combined with its crispy texture, makes it a favorite among people of all ages.
This sweet treat is especially significant during festivals like Makar Sankranti and Lohri. Although making it requires some patience and skill, the homemade version is far superior in taste compared to store-bought options. Achieving the right syrup consistency and proper folding technique results in a light color and a glossy finish.
Saroj Devi, a resident of a rural area, shared that while preparing sesame Revdi is straightforward, it does demand some effort. The ingredients needed include 400 grams of jaggery, half a cup of sugar, ¼ cup of water, ¼ teaspoon of lemon juice, half a teaspoon of rose water, three teaspoons of ghee, three pinches of Himalayan pink salt, and three cups of white sesame seeds.
To start, combine jaggery, sugar, water, lemon juice, rose water, and a pinch of pink salt in a pan. Mix thoroughly and boil over low heat for 2 to 3 minutes until the jaggery melts completely. Next, add ghee and stir continuously until the syrup forms. To test the syrup's consistency, drop a small amount into cold water; if it hardens into a ball, it’s ready. It’s crucial to act quickly once the syrup is prepared, as it sets rapidly. To prevent burns, wear heat-resistant gloves and grease your hands and tools with ghee.
Pour the mixture onto a greased silicone mat and allow it to cool for a minute. Then, using a greased scraper, fold it continuously for 8 to 10 minutes until it’s cool enough to handle. Continue stretching and folding for another 4 to 5 minutes until it becomes light, glossy, and pliable. Cut into small pieces and set aside. In a separate pan, dry roast the sesame seeds over low heat for 4 to 5 minutes, then turn off the heat. Add the chopped jaggery pieces to the sesame seeds and mix well. Allow it to cool completely before storing it in an airtight container. This sesame candy (rewadi) can remain fresh for up to a month.
