Ingredients for Raw Banana Tikki:
3 to 4 raw bananas
1 boiled potato
2 green chilies
1-inch piece of ginger
2 tablespoons fresh coriander leaves
1 teaspoon roasted cumin powder
1 teaspoon dry mango powder (*amchur*) or lemon juice
1/2 teaspoon garam masala powder
2 tablespoons water chestnut flour (*singhara atta*)
Salt to taste
Oil or ghee for shallow frying

Instructions for Preparing Raw Banana Tikki:

Begin by washing the raw bananas, cutting off both ends, and placing them in a pressure cooker with a cup of water and a pinch of salt. Cook until you hear 2 to 3 whistles.

Once done, turn off the heat and let the pressure release naturally. Remove the bananas, allow them to cool, and peel off their skins.

Grate the bananas into a large bowl and mash them well with a masher to eliminate any lumps.

Incorporate the green chilies, ginger, fresh coriander, roasted cumin powder, dry mango powder, garam masala, and salt into the mashed bananas. Add the water chestnut flour to bind the mixture and knead it into a firm dough. Lightly grease your hands with oil or ghee, take small portions of the mixture, and shape them into *tikkis* (patties) by rolling them into balls and flattening them.

Heat 2 to 3 tablespoons of oil or ghee in a non-stick *tawa* (griddle) or pan over medium heat. Once hot, place the *tikkis* on the pan.

Cook the *tikkis* on medium-low heat for 3 to 4 minutes until the bottom is golden brown. Flip them using a spatula and cook the other side until it is also crispy and golden.

Your hot and crispy raw banana *tikkis* are now ready to be served. Pair them with green coriander-mint chutney, sweet and tangy tamarind chutney, or tomato ketchup.
