Introduction to Besan Mirchi

If you've savored the iconic Rajasthani dish 'Dal-Baati-Churma,' you might have also enjoyed the accompanying 'Besan Mirchi'—green chilies stuffed with gram flour. One of the appealing aspects of this dish is its ability to be stored and enjoyed over several days.

Why Choose Besan Mirchi?

For those who find themselves bored with the same vegetable dishes or are in the mood for something with a spicy and tangy kick, Besan Mirchi is an excellent choice for lunch or dinner.

Ingredients for Stuffed Besan Mirchi

To prepare this delightful dish, gather the following ingredients:

Ingredients
6–7 large green chilies
2–3 teaspoons gram flour (besan)
1/2 teaspoon cumin seeds
1 pinch asafoetida (hing)
1 teaspoon dry mango powder (amchur)
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 tablespoon oil
2 teaspoons finely chopped fresh coriander leaves
1/4 teaspoon red chili powder
Salt to taste

Preparation Method

To make the stuffed 'Besan Mirchi,' begin by slicing the green chilies lengthwise and removing the seeds. Set them aside.

Next, heat 1 tablespoon of oil in a pan and add 1/2 teaspoon of cumin seeds along with a pinch of asafoetida. Sauté for about 20 seconds.

Incorporate 2–3 teaspoons of gram flour into the pan and roast it on low heat for 10–15 minutes. If you like extra heat, you can add some of the chili seeds you removed earlier.

Once the gram flour is roasted, mix in 1 teaspoon of dry mango powder, 1/2 teaspoon of turmeric powder, 1/4 teaspoon of red chili powder, and 1 teaspoon of coriander powder. Season with salt and let the mixture cook for 4–5 minutes.

Your stuffing is now ready; fill it into the prepared green chilies.

Heat another teaspoon of oil in a pan and add the stuffed chilies. Fry them for about 2 minutes. If you prefer, you can chop the chilies into smaller pieces after cooking and mix in any leftover stuffing.

Your Rajasthani-style stuffed gram flour chilies (Bharwa Besan Mirchi) are now ready to be served alongside dal.
