**Ingredients for Pheni:**
2 cups all-purpose flour (Maida)
1 cup desi ghee
2-3 tablespoons rice flour
1.5 cups sugar
Milk (as needed)
1 cup water (for sugar syrup)
1/2 teaspoon cardamom powder
Saffron and dry fruits for garnishing
**Preparation Method for Pheni:**
Begin by mixing 2-3 tablespoons of *desi ghee* into the all-purpose flour, kneading it into a soft dough with lukewarm water. Cover the dough and let it rest for 15-20 minutes.
In a separate bowl, combine the rice flour with *ghee* to form a smooth paste.
Roll out a portion of the dough, spread the paste over it, and layer another rolled-out piece on top. Repeat this layering process 3-4 times to create thin layers. Then, gently stretch these layers into thread-like strands and coil them into a nest shape.
Heat *ghee* in a deep pan (kadhai), add the *Pheni* coils, and fry them on low heat until they turn golden brown. Once done, remove them and let them drain excess ghee.
Next, prepare the sugar syrup by heating water and sugar in a pan, adding cardamom powder and saffron strands. Allow the syrup to cool slightly, then dip the *Pheni* into it for about a minute before removing.
Garnish with pistachios, almonds, and a few saffron strands. Serve the *Pheni* with or without milk; it’s delightful either way.
