Indulge in the Rich Flavors of Paneer Kofta

Paneer Kofta is a beloved dish in Indian cuisine, often reserved for festive occasions. The combination of its creamy sauce and tender koftas (dumplings) greatly enhances the dining experience. If you're looking to make a restaurant-quality Paneer Kofta at home, this straightforward recipe is just what you need.

Ingredients
For the Koftas:
250g paneer (Indian cottage cheese)
2 boiled potatoes
2 tablespoons cornflour
1 green chili, finely chopped
1/2 teaspoon red chili powder
Salt to taste
Oil for frying

For the Gravy:
2 medium-sized onions
2 tomatoes
10–12 cashews
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
2 tablespoons fresh cream
2 tablespoons oil
Salt to taste
Fresh coriander leaves for garnishing

Instructions for Making Koftas:
Start by grating the paneer. Peel and mash the boiled potatoes, then combine them with the grated paneer. Incorporate the cornflour, salt, green chili, and red chili powder until the mixture is smooth and soft.

Form the mixture into small, round koftas. Heat oil in a pan and fry the koftas over medium heat until they are golden brown. Once cooked, remove them from the oil and place them on a paper towel to absorb excess oil.

Instructions for Making the Gravy:
Lightly boil the onions, tomatoes, and cashews. After cooling, blend them into a smooth paste. In a pan, heat oil, add the ginger-garlic paste, and sauté.

Then, add the blended onion-tomato-cashew paste and cook for 5–7 minutes, stirring continuously. Once the masala starts to release oil, add turmeric powder, coriander powder, red chili powder, and salt. Continue to sauté for a few more minutes to eliminate the raw taste. Add water as needed and simmer the gravy on low heat for 8 to 10 minutes. Finally, mix in the garam masala and fresh cream thoroughly.

Serving Suggestion
Introduce the koftas to the gravy just before serving. Garnish with fresh coriander leaves and a drizzle of cream. Your Paneer Kofta is now ready to be enjoyed.

Important Tips

Avoid leaving the koftas in the gravy for too long, as they may become overly soft and disintegrate. Incorporating kasuri methi (dried fenugreek leaves) into the gravy can enhance its flavor and aroma. Serve this delectable Paneer Kofta with naan, tandoori roti, parathas, or jeera rice, and relish its rich, royal taste with your family.
