To create this pickle, you will need just a few items:
Gooseberries (Amla): 500 grams
Green chilies: 4-5 (sliced lengthwise)
Ginger: 2-inch piece (thinly sliced) - Optional
Salt: To taste (add a bit more to prevent spoilage)
Turmeric powder: Half a teaspoon
Lemon juice: 2 tablespoons
Water: For boiling
Instructions:
Begin by thoroughly washing the gooseberries. Next, bring water to a boil in a pot and add the gooseberries. Allow them to boil for about 10 minutes until they soften slightly. Be cautious not to overcook; they should be just tender enough for the segments to begin separating.
Once boiled, remove the gooseberries from the water and let them cool. After cooling, gently press them to separate the segments and extract the seeds.
