Transforming Leftover Rotis into Tasty Cutlets


Leftover Roti Cutlet: After dinner, it's common to have a couple of rotis left uneaten. Instead of discarding them, consider making crispy and flavorful roti cutlets for breakfast. This dish is quick to prepare and can be enhanced with various vegetables you have on hand.



Ingredients for the Cutlets
Gather 3-4 slices of bread, 2 boiled potatoes, 1 small onion, 1 green chili, a handful of fresh coriander leaves, and half a capsicum. For seasoning, include red chili powder, cumin powder, chaat masala, and salt to taste. To help bind the mixture, you may use 1-2 tablespoons of gram flour (besan) or cornflour. Additionally, some oil will be needed for frying the cutlets.


Preparing the Mixture
Start by tearing the bread into small pieces and coarsely grinding them. Avoid making a fine powder to maintain the cutlets' texture.


Next, mash the boiled potatoes in a large bowl. Incorporate the ground bread, finely chopped onion, green chili, capsicum, and fresh coriander leaves. Then, add the red chili powder, cumin powder, chaat masala, and salt, mixing everything thoroughly.


If the mixture seems too wet or sticky, add a bit of gram flour or cornflour. Knead the mixture well and divide it into small portions.


Making Crispy Cutlets
Lightly oil your hands and shape the mixture into round or oval patties, flattening them slightly. Repeat this process for all the cutlets.


Heat oil in a non-stick pan or a regular griddle (tawa). Place the cutlets in the pan and cook over medium heat until they are golden and crispy on both sides. Handle them gently to prevent breaking while flipping.
