Lachha Pyaz Paratha (Layered Onion Paratha) Recipe
If you're in search of a tasty and quick dinner option, Lachha Pyaz Paratha is a fantastic choice. This dish features a crispy exterior and a flavorful onion filling that is sure to please everyone at the table. The beauty of this recipe lies in its simplicity, requiring only basic ingredients like flour, onions, and a few spices. Let’s dive into an easy method for preparing Lachha Pyaz Paratha.
For this recipe, gather 2 cups of whole wheat flour, salt to taste, water as needed, and 1 teaspoon of oil. For the filling, you will need 4 finely sliced onions, 2 teaspoons of Kashmiri red chili powder, ½ teaspoon each of coriander powder, cumin powder, nigella seeds (kalonji), carom seeds (ajwain), garam masala, and black salt, along with 2 green chilies, fresh coriander leaves, and 1 teaspoon of mustard oil.
Step 1: Start by mixing the whole wheat flour and salt in a large bowl. Gradually incorporate water to form a soft dough. Add a teaspoon of oil and knead until the dough is smooth and pliable. Cover the dough with a damp cloth and let it rest for 15–20 minutes. This resting period helps in rolling out the parathas more easily. Meanwhile, prepare the spiced onion filling.
Step 2: Slice the onions into thin strips and place them in a bowl. Sprinkle a little salt and let them sit for a few minutes to draw out moisture. Afterward, squeeze out the excess water and transfer the onions to a clean bowl. Mix in the garam masala, coriander powder, Kashmiri red chili powder, black salt, cumin powder, green chilies, nigella seeds, carom seeds, finely chopped fresh coriander, and mustard oil, ensuring everything is well combined.
Step 3: Once the dough has rested, divide it into equal portions. Take one portion and roll it into a round shape, similar to a chapati. Spread the onion filling evenly in the center. Make a cut from the center to the edge of the rolled dough, then roll it up from the cut edge to form a circular shape. Gently press it down to create a layered dough ball. Dust with dry flour and roll it out again, being careful to keep the layers intact.
Step 4: Heat a griddle (tawa) over medium heat. Place the prepared paratha on the griddle and lightly toast it on both sides without any oil or ghee. Then, apply ghee to both sides and cook, flipping occasionally, until the paratha is golden brown and crispy. Serve your delicious layered onion paratha hot with green chutney, yogurt, or pickles. It’s so delightful that everyone will be left wanting more!
