1 finely chopped onion

Half a teaspoon of turmeric powder

Half a teaspoon of red chili powder

Salt to taste

Juice of half a lemon

Finely chopped coriander leaves

(For garnish) Ratlami sev, finely chopped tomatoes, and onions

# Steps to Prepare Indori Poha

1. Prepare the Poha: Rinse the poha thoroughly in clean water, then transfer it to a plate and gently press it with your hands to fluff it up.

2. Make the Tempering: Heat oil in a pan, then add mustard seeds, cumin seeds, chopped green chilies, and curry leaves, allowing them to temper lightly.

3. Sauté Onions and Potatoes: Introduce the finely chopped onions and sauté until they turn a light golden color. Next, add the diced potatoes, cover, and cook on low heat.

4. Incorporate Peas and Peanuts: Once the potatoes are golden, mix in half a cup of peas and peanuts. Feel free to add any other vegetables you prefer.

5. Add Spices: Once all ingredients are well-cooked, sprinkle in turmeric powder, red chili powder, and salt, mixing everything thoroughly.

6. Combine with Poha: Lower the heat and gently fold in the soaked poha. Stir all ingredients together and sauté for 2-3 minutes.

7. Garnish and Serve: Serve the poha on a plate, drizzle with lemon juice, and top with Ratlami sev, chopped tomatoes, onions, and coriander leaves.
