Ingredients for Rabri Kulfi:
1.5 liters of full-cream milk
1/2 cup sugar
50 grams of Mawa/Khoya
1/2 teaspoon green cardamom powder
10-12 saffron strands
2 tablespoons chopped almonds
2 tablespoons chopped pistachios
2 tablespoons chopped cashews
Instructions for Making Rabri Kulfi:
Begin by pouring the milk into a heavy-bottomed pan and bringing it to a boil over high heat. Once boiling, lower the heat and stir continuously to prevent sticking.
Scrape the cream (malai) that forms on the sides of the pan and mix it back into the milk; this adds to the Kulfi's delightful grainy texture.
When the milk reduces to half its original volume, incorporate the soaked saffron and finely chopped nuts.
Continue cooking until the milk thickens and reduces to one-third of its original amount. Once it reaches a thick, grainy consistency resembling Rabri, add the sugar and cardamom powder.
Cook for an additional 3-4 minutes after adding the sugar, then turn off the heat.
Let the Rabri cool completely to room temperature. Pour the mixture into kulfi molds, earthen pots, or small plastic cups; securely cover with butter paper or aluminum foil and fasten with rubber bands.
Place the molds in the deep freezer for at least 7 to 8 hours or overnight.
The next day, to unmold the kulfi, dip the molds in room-temperature water for 10-15 seconds or rub them between your palms. Then, gently twist the kulfi stick to release the kulfi.
