To create this delightful *chaat*, gather the following ingredients from your kitchen:


White dried peas (*Safed Matar*): 1 cup (soaked overnight)
Onion: 1
Tomato: 1
Green chilies: 1-2
Boiled potato: 1
Sweet and tangy tamarind chutney: 2-3 tablespoons
Green chutney: 1 tablespoon
Chaat masala: 1 teaspoon
Roasted cumin powder: ½ teaspoon
Black salt and regular salt: To taste
Red chili powder: A pinch
Lemon juice: 1 teaspoon
Fresh coriander leaves: For garnishing
Sev or papdi: For garnishing


**Step-by-Step Guide to Prepare Matar Chaat**
Begin by rinsing the soaked white peas under clean water. Place them in a pressure cooker, adding a bit of salt, a pinch of turmeric, and enough water to cover the peas. Secure the lid and cook until you hear 3-4 whistles. Ensure the peas are tender but not overly mushy.


After cooking, transfer the peas to a mixing bowl. If there's excess water, you can reduce it by heating the peas for a few minutes. Next, mix in the finely chopped onion, tomato, green chili, and diced boiled potato.
