Ingredients Needed

For Creamy Kulfi:
1 liter full-cream milk
1/2 cup sugar
1 teaspoon cardamom powder
2-3 tablespoons chopped almonds and pistachios
10-12 saffron strands
1/4 cup mawa (dried whole milk/khoya)


Preparation Steps

Begin by pouring the full-cream milk into a heavy-bottomed pan and bringing it to a boil over high heat. Once boiling, lower the heat to medium-low.

Allow the milk to simmer until it reduces to about one-third of its original volume, scraping the cream that forms on the sides back into the mixture.

When the milk thickens, stir in the sugar, cooking for an additional 5 minutes as the mixture thins slightly.

Add the soaked saffron, finely chopped nuts, and cardamom powder. Grate the mawa into the mixture, combine well, and cook for another 2 minutes before removing from heat. Let the mixture cool to room temperature, where it will thicken further.

Pour the cooled mixture into kulfi molds, plastic cups, or small earthen pots. Seal the molds with aluminum foil to prevent ice crystals, making a small slit for an ice cream stick. Freeze for 7 to 8 hours or overnight.


Serving Your Kulfi

To serve, briefly dip the molds in room-temperature water or rub them between your hands to release the kulfi easily.
