Simple Steps to Prepare Chyawanprash
Ingredients Needed:
Fresh Amla (Indian gooseberry) - 500 grams
Ghee - 2-3 tablespoons
Jaggery or Honey - 300 grams (adjust to taste)
Spices:
Cardamom powder - 1 teaspoon
Cinnamon powder - 1/2 teaspoon
Dry ginger powder - 1/2 teaspoon
Long pepper powder - 1/2 teaspoon
Black pepper powder - 1/4 teaspoon
Preparation Method
Begin by thoroughly washing the Amla and then boiling them in a pressure cooker for 2-3 whistles or until they are tender. After cooling, remove the seeds and blend the Amla into a coarse paste without adding water.
Next, heat ghee in a heavy-bottomed pan. Once hot, add the Amla paste and sauté over medium heat until it turns light brown and separates from the pan's sides.
After roasting the Amla paste, incorporate jaggery or honey. If using jaggery, melt it with a bit of water and strain before mixing it in. Lower the heat and stir continuously to avoid sticking. When the mixture thickens and resembles jam, add the dry spices and mix thoroughly.
Final Steps
Continue cooking for an additional 5-7 minutes until it reaches the desired Chyawanprash consistency. Once done, turn off the heat and allow it to cool completely before transferring it to a clean, dry glass jar.
