1/2 liter Full-cream milk
1/2 cup Sugar
1/4 cup Desi Ghee
1/2 teaspoon Cardamom powder
1 teaspoon Lemon juice or alum water

Preparation Method
Begin by heating 1/4 cup of desi ghee in a pan. Add the besan and roast it on a low flame, stirring continuously.
Once the besan turns a light golden color and emits a pleasant aroma, remove it from the heat. Be cautious not to burn the besan, as this will affect the flavor.
In a separate heavy-bottomed pan, pour in the milk and bring it to a boil over medium heat, stirring occasionally to prevent sticking. Cook until the milk reduces to about half its volume and thickens.
Next, incorporate the roasted besan into the thickened milk, mixing thoroughly while ensuring no lumps form. Continue cooking on low heat.
Gradually add the remaining ghee while stirring constantly. When the mixture begins to pull away from the sides of the pan, add the sugar. The mixture may thin slightly after adding sugar, but keep cooking. Add the lemon juice and mix gently; this step is crucial for achieving the signature grainy texture of the milk cake.
