Enhancing Flavorful Gravy During Navratri

During Navratri, many families refrain from using onion and garlic, which can sometimes result in bland dishes. If you find yourself in this situation over the nine days, there are numerous techniques to enrich your vegetable gravies without these ingredients. Here are some effective tips:

**Tomato Puree**
Using tomato puree is a simple and cost-effective method to create flavorful gravies without onions. Instead of the usual two tomatoes, consider using four and extract their juice or pulp. Alternatively, chop and cook the tomatoes until they soften, adding a zesty taste to your dish.

**Gram Flour (Besan)**
Begin by dry-roasting two tablespoons of gram flour in a pan on low heat until it emits a pleasant aroma. When preparing your vegetable dish, combine the roasted gram flour with a bit of water, tomatoes, and spices.

**Moong Dal and Sesame Seed Paste**
Dry-roast moong dal (split yellow lentils) and sesame seeds together in a pan. After cooling, grind them into a fine paste. Incorporate this paste with some water into your vegetable dish for added thickness and a nutty flavor, enhancing the overall taste.

**Yogurt (Curd)**
Before adding yogurt to your gravy, whisk it well and mix in spices such as turmeric, chili powder, and coriander powder. Cook it gently to prevent curdling.

**Cream or Coconut Milk**
For a rich and creamy texture, opt for either fresh cream or coconut milk.

**Potato**
Depending on the dish's volume, mashing and adding two or three medium potatoes can effectively thicken the gravy without much hassle.

**Cashew and Poppy Seed Paste**
A paste made from cashews and poppy seeds can enhance both the thickness and flavor of your dish. For recipes like Shahi Paneer or Malai Kofta, soak 10–12 cashews and one teaspoon of poppy seeds in water for at least 15 minutes, then grind into a fine paste and mix it into your dish.
