Golgappa Chaat Recipe

Golgappa Chaat Recipe: One of the most delightful experiences of enjoying golgappas is the satisfying crunch of the crispy shell as it bursts in your mouth, paired with a flavorful potato and chickpea filling, along with a tangy and spicy water. To achieve the authentic taste of street-style golgappas at home, it's essential to focus not only on the right spices but also on the preparation method; exposure to moisture can ruin the crispiness of the shells.

To make golgappa chaat, it’s advisable to prepare the flavored water, filling, and crispy shells separately. Below is a straightforward recipe for making golgappa chaat, featuring a spicy coriander-mint water, a potato-chickpea filling, and perfectly crispy shells. Ingredients for Making Golgappa Chaat
For the Puris (shells):
1. 25–35 store-bought golgappa puris
2. A little oil (if frying puris at home)

For the Potato-Chickpea Filling:
1. 2 medium-sized potatoes
2. 3/4 cup boiled chickpeas
3. 1 teaspoon roasted cumin powder
4. 1/2 to 3/4 teaspoon salt
5. 1/2 teaspoon red chili powder (adjust to taste)
6. 1 teaspoon chaat masala or amchur (dried mango) powder
7. 2 tablespoons chopped fresh coriander leaves

For the Spicy Water (Teekha Paani):
1. 1 cup fresh coriander leaves
2. 1/2 cup mint leaves
3. 1–3 green chilies
4. 1/2 inch piece of ginger (optional)
5. 1 teaspoon roasted cumin powder
6. 1 to 1.5 teaspoons black salt (kala namak)
7. 1/2 to 3/4 teaspoon regular salt
8. 1–2 tablespoons tamarind pulp or 2–3 tablespoons lemon juice
9. 3.5 to 4 cups chilled water
10. 1–2 teaspoons jaggery or sugar (optional)

How to Prepare Crispy Puris:
If you have purchased golgappa puris, preheat your oven to 110–120°C to make them crispy. Place the puris in a single layer on a tray and heat for 4–7 minutes, ensuring they do not brown. Allow them to cool completely on the tray before storing in an airtight container.

If you are making the puris from scratch, knead a firm dough using semolina (sooji), a bit of all-purpose flour (maida), salt, and water. Cover and let it rest for 20–30 minutes. Roll out the dough into thin, uniform discs (puris) and fry them in hot oil. For the puris to puff up properly, the dough must be firm, and the oil must be heated to the right temperature.

How to Prepare the Tangy Potato-Chickpea Stuffing:
Boil the potatoes, allow them to cool, and peel them. Lightly mash the potatoes and mix in the boiled chickpeas. Add roasted cumin powder, salt, red chili powder, chaat masala, and fresh coriander leaves, and mix well.

Ensure the stuffing is not overly moist; it should have a consistency that allows easy scooping with a spoon. Refrigerate the stuffing for at least 30 minutes to make it easier to fill into the golgappas.

How to Prepare the Spicy Coriander-Mint Water:
In a blender, combine coriander leaves, mint leaves, green chilies, ginger, roasted cumin, black salt, regular salt, and either tamarind pulp or lemon juice. Add about 2 cups of cold water and blend until smooth.

Strain the mixture through a fine-mesh sieve into a jug. Add more cold water until you reach a total of 3.5 to 4 cups. Taste the water and adjust the salt, tanginess, or spice level as needed. If it tastes too sour, you can add a little sugar or jaggery.
Chill the water in the refrigerator for at least 2 hours. For a milder flavor, start with just one green chili and increase the number as desired for more heat.

Tips for Serving Golgappas:
To maintain the crispiness of the golgappas, prepare them just before serving. Make a small hole in each puri using your thumb, fill it with 1–2 spoonfuls of the potato-chickpea mixture, and pour in the chilled, spicy water.
If desired, you can garnish with some boondi, sev, or finely chopped onions. However, add these ingredients only at the time of serving. If the stuffed puris sit for too long, they may become soft. For the best taste, enjoy the golgappas immediately after preparation.
