Savor the Comfort of Garlic Fried Rice

Garlic Fried Rice: As winter settles in Ranchi, Jharkhand's capital, the evenings are becoming increasingly chilly. If you're feeling the cold, trying your hand at 'Garlic Fried Rice' is a must. This dish features a hearty amount of garlic, known for its warming properties—so much so that you might find yourself sweating while enjoying it! The best part? It can be prepared quickly using leftover rice.

Divya, a local from Ranchi, emphasizes how simple this dish is to make. Begin with 10 to 12 cloves of garlic. Instead of using a mixer, crush them using a mortar and pestle, ensuring they remain coarse rather than turning into a paste.

It’s perfectly acceptable to have some larger garlic pieces. Additionally, prepare chopped or crushed onion, tomato, and 4 to 5 green chilies. Have your leftover rice ready on a separate plate, as it works best for this recipe.

To start cooking, heat an iron wok (kadhai) on the stove; using an iron wok enhances the dish's flavor. Pour in some mustard oil, and once it’s hot, add cumin seeds for tempering. Next, introduce the crushed garlic and let it cook for a moment. Then, add the chopped onion, tomato, and crushed green chilies.

Sauté the mixture lightly. Once the ingredients are partially cooked, season with coriander powder, a mixed spice blend (garam masala), turmeric, and salt to taste. After mixing these well, incorporate the leftover rice and stir it thoroughly with the spices.

For an extra flavor boost, sprinkle a packet of Maggi masala on top. Stir-fry everything over high heat a couple of times, then remove from heat. Your hot and flavorful garlic fried rice is now ready! Serve it on a plate and enjoy it with your family during this chilly weather.
