How to Make Doodh Laddu from Curdled Milk



Doodh Laddu Recipe: Occasionally, milk at home may curdle unexpectedly, leading to uncertainty about its use. Instead of discarding it, consider turning it into a delightful sweet treat. A recipe featured on a popular YouTube channel illustrates how to create *laddus* (sweet balls) from curdled milk and nuts. The initial step involves making *paneer* (cottage cheese) from the curdled milk, followed by cooking it with sugar, milk powder, and cardamom until it reaches a *mava*-like (condensed milk solids) texture.



Chopped cashews, almonds, and coconut are then incorporated to form the *laddus*. The beauty of this recipe lies in its use of common household ingredients.


**Ingredients for Doodh Laddu:**
1 liter curdled milk, ½ cup sugar, ½ cup milk powder, 1 teaspoon cardamom powder, 1 tablespoon *ghee* (clarified butter), 150–200 grams chopped cashews and almonds, 2–3 tablespoons desiccated coconut, and pistachios and almonds for garnishing.


**Step 1: Prepare the Paneer:**
Begin by adding a small amount of water to a heavy-bottomed pan, then pour in the curdled milk and heat it. Once the milk has completely curdled, strain it using a muslin cloth or fine sieve to separate the *paneer* from the whey. It’s essential to press out excess moisture from the *paneer*; too much water will prevent the *laddu* mixture from binding properly.


**Step 2: Create the Sweet Mixture:**
Transfer the prepared *paneer* into a mixer jar. Add sugar, milk powder, cardamom powder, and a little water, then blend until smooth. In a pan, heat *ghee*, add the mixture, and cook while stirring continuously. The mixture will thicken and resemble *mava*. Turn off the heat when it starts to leave the sides of the pan. Be cautious not to overcook, as this can lead to hard *laddus*.


**Step 3: Add Dry Fruits for Extra Flavor:**
In another pan, heat a bit of ghee and lightly roast the chopped cashews and almonds. Add the desiccated coconut and mix briefly. Avoid high heat to preserve the flavor of the dry fruits. Allow the *mawa*-like mixture to cool slightly, then incorporate the roasted dry fruits and coconut. Once cool enough to handle, shape the mixture into round *laddus*. Garnish with pistachio and almond pieces, adjusting the size as desired.
