One such dish is *Dal Bafla*, a cherished specialty from the regions of Rajasthan and Madhya Pradesh. While many are familiar with *Dal-Baati*, *Dal Bafla* is regarded as a regal twist on this classic dish.


Ingredients for Dal Bafla

*Baflas* are known for their crispy exterior and soft interior, achieved by boiling them before roasting or baking. Here’s how to prepare this delightful dish:

**Ingredients for Bafla**
200–250g wheat flour
1/4 cup semolina (*rava*)
1/4 tsp turmeric powder
1/4 tsp carom seeds (*ajwain*)
1/4 tsp baking soda
3 tbsp *ghee*
2–3 tbsp *ghee* or oil (for roasting)
Water as needed (for kneading)

1/2 cup *moong dal* (split yellow moong)
1/4 cup *masoor dal* (red lentils)
1/4 cup *chana dal* (split Bengal gram)
1 finely chopped onion
1 finely chopped tomato
1 chopped green chili
3 tsp *ghee* or oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp ginger-garlic paste
1/2 tsp Kashmiri red chili powder
2 tbsp finely chopped coriander leaves
1/4 tsp *garam masala*
1/4 tsp turmeric powder
1 pinch asafoetida (*hing*)
1 cup water
Salt to taste


Step-by-Step Preparation of Bafla

**Method for Making Bafla**
Begin by soaking the 1/2 cup *moong dal*, 1/4 cup *masoor dal*, and 1/4 cup *chana dal* in water for a minimum of 30 minutes. In the meantime, prepare the *baflas*: in a large bowl, mix 200–250g of wheat flour with 1/4 cup of semolina. Incorporate 3 tablespoons of ghee, 1/4 teaspoon of turmeric powder, 1/4 teaspoon of carom seeds, 1/4 teaspoon of baking soda, and salt to taste into the flour mixture.

Thoroughly combine these ingredients until the mixture feels moist. Gradually add water as needed to knead the dough. Cover it and allow it to rest for at least 20 minutes. While the dough rests, bring some water to a boil.

Shape the rested dough into small balls and gently place them into the boiling water. Let them cook for 15 minutes. Afterward, remove the balls from the water and set them aside. Heat 2-3 tablespoons of ghee on a griddle (tawa) and arrange the boiled *baflas* on it. Cover and cook over medium heat for about 5 minutes. Once one side is golden brown, flip the *baflas* to cook the other side. Your *baflas* are now ready, and you can start preparing the *dal* (lentil curry) simultaneously.


Cooking the Dal

**Method for Making Dal:**
In a pressure cooker, cook the lentils with ghee, turmeric powder, and salt to taste. Meanwhile, in a large pan, heat oil or ghee and add cumin seeds, mustard seeds, and a pinch of asafoetida. Next, add the chopped onions and sauté until they are translucent.

Then, incorporate the tomatoes along with turmeric powder, red chili powder, coriander powder, and *garam masala*; allow the mixture to cook for a few minutes. Finally, add the cooked lentils to the pan and mix thoroughly. Garnish with fresh coriander and transfer to a serving bowl.
