Ingredients Needed:


Tofu - 200 grams
Salt - to taste
Oil - for shallow frying
For the crust:
Salted edamame - 50 grams (coarsely ground)
Panko breadcrumbs - 3 tablespoons
Togarashi spice - 2 teaspoons
For the slurry:
Cornflour - 2 tablespoons
Water - 1/4 cup
Salt - to taste
For the sauce:
Gochujang - 3 tablespoons
Soy sauce - 2 teaspoons
Water - 2 tablespoons
Vinegar - 1 teaspoon
Sugar - 1 teaspoon


Preparation Steps:


Begin by pressing the tofu for about 10-15 minutes to eliminate excess moisture. Cut it into thick cubes and lightly season with salt. Coarsely grind the salted edamame, keeping some texture. Combine it with panko and togarashi in a bowl. In another bowl, whisk together cornflour, water, and salt until you achieve a smooth, slightly thick batter. Dip the tofu cubes into the batter, allowing any excess to drip off, then coat them thoroughly with the edamame-panko mixture, ensuring all sides are covered. Heat oil in a pan over medium heat.


Fry the tofu until it turns golden brown and crispy. Once done, place it on a paper towel to absorb excess oil. In a small saucepan, mix gochujang, soy sauce, water, vinegar, and sugar.
