Grated zest of 1 orange and 1 lemon
1 tablespoon candied orange peel
1 tablespoon candied lemon peel
1 teaspoon each of mixed spice, nutmeg powder, and cinnamon powder
30 grams chopped almonds
2 eggs
50 ml rum
70 ml white wine
70 ml stout
Method for Preparing Christmas Pudding:
Begin by thoroughly mixing the suet, flour, breadcrumbs, and sugar in a large bowl. Next, incorporate the dried fruits, grated apple, orange and lemon zest, candied peels, spices, and almonds.
In a separate bowl, whisk the eggs and blend in the rum, wine, and stout. Combine this mixture with the dry ingredients and stir well to create a thick batter. Cover the bowl and refrigerate it overnight. The following day, remove it from the fridge and give it another stir. Grease a 1.1-liter pudding mold or an ovenproof bowl with butter and fill it with the pudding mixture. Securely cover it with greaseproof paper and foil.
Place the bowl in a large pot and add boiling water until it reaches halfway up the sides of the bowl. Cover and steam on low heat for about 8 hours, adding more boiling water as necessary to maintain the level.
Serving the Pudding:
The pudding can be served right away or allowed to cool and stored for up to a year. To serve, simply steam it again for 2.5 hours. This recipe yields enough for approximately 11 servings.
