Discover the Delight of Tamatar Chokha

In Bihar, the culinary scene is not limited to the famous *litti-chokha*; another beloved dish is *tamatar ka chokha*, a spicy mashed tomato preparation that is savored widely. This rustic dish stands out for its rich flavor, achieved with just a handful of basic ingredients and minimal spices.

If you're seeking to spice up your meals beyond the usual fare of vegetables and lentils, Bihari-style *tamatar chokha* is a tasty and straightforward choice. Here’s how to make it:

Ingredients Needed

Ingredients:

1 tablespoon mustard oil

4–5 finely chopped *desi* tomatoes

3–4 dried red chilies

7–8 garlic cloves

2 medium-sized onions

2 tablespoons finely chopped fresh coriander leaves

1 teaspoon cumin seeds

2 chopped green chilies

1/4 teaspoon red chili powder

Juice of 1/2 a lemon

Salt to taste

Preparation Method

Method:

To create the *tamatar chokha*, begin by washing the *desi* tomatoes and cutting them into large chunks. Opting for tart tomatoes will enhance the flavor of the dish.

Heat a pan and pour in 1 tablespoon of mustard oil.

Once the oil is hot, add the dried red chilies and roast them for about a minute until well done.

Next, introduce the finely chopped garlic cloves and sauté until they turn a golden brown.

Add the cumin seeds to the hot oil and allow them to roast briefly.

Then, incorporate the finely chopped onions and fry until they are golden.

Add the chopped *desi* tomatoes to the pan, cover it, and let it simmer on low heat for a while.

After the tomatoes are thoroughly cooked, transfer them to a plate.

Mix the roasted garlic and red chilies into the cooked tomatoes, mashing everything together with a masher or spoon until it reaches a smooth consistency.

During this mashing, add 1/4 teaspoon of red chili powder and salt to taste.

Once well mixed, fold in the chopped coriander leaves.

Finally, squeeze the juice of half a lemon for a zesty finish.

Your Bihari-style tangy tomato chokha is now ready to be served alongside roti or rice.
