Introduction to Balushahi

Balushahi is an iconic Indian sweet that is a must-have during festivals and celebrations. With its crunchy outer layer and soft, flaky inside, this delightful treat is easier to make than you might think. With the right approach and a bit of patience, you can create authentic Balushahi in your own kitchen.

Ingredients Needed

Ingredients
2 cups of all-purpose flour (Maida)
½ cup of ghee
½ teaspoon of baking powder
¼ teaspoon of baking soda
¼ cup of yogurt (Dahi)
Lukewarm water as required
Ghee or oil for frying
For the sugar syrup (Chashni)
2 cups of sugar
1 cup of water
½ teaspoon of cardamom powder
A few strands of saffron
Chopped pistachios and almonds for garnish

Steps to Prepare Balushahi

Method for making Balushahi
In a large bowl, mix the all-purpose flour, baking powder, and baking soda. Incorporate the ghee by rubbing it into the flour until it resembles breadcrumbs. Add the yogurt and mix gently. If necessary, add lukewarm water to create a soft dough, being careful not to over-knead, as this will affect the layers of the Balushahi. Cover the dough and let it rest for 20 to 25 minutes.

Divide the rested dough into small pieces. Roll each piece into a ball, flatten it slightly, and create a small indentation in the center using your thumb, which is the traditional Balushahi shape.

Making the Sugar Syrup

Preparing the sugar syrup
In a saucepan, combine sugar and water, bringing it to a boil. Once the sugar dissolves and the syrup reaches a "one-string" consistency, stir in the cardamom powder and saffron. Remove from heat and keep the syrup warm.

Frying the Balushahi

The right way to fry
Heat ghee or oil in a deep pan (kadhai). Ensure the oil is not too hot. Fry the Balushahi on low heat until they turn golden brown, which should take about 10 to 15 minutes. Frying at high temperatures can cause them to burn outside while remaining uncooked inside.

Once golden brown, take them out of the oil and let them cool for a few minutes. While still warm, immerse them in the warm sugar syrup for about 5 minutes.

Serving Suggestions

Serving instructions:
After soaking in the syrup, remove the Balushahi and garnish with chopped pistachios and almonds. Allow them to rest so the syrup can set properly.
