A Quick and Tasty Breakfast Option

If you're in search of a light, flavorful, and easy-to-make breakfast, 'special poha' is a fantastic option. This dish is especially favored in Madhya Pradesh and Maharashtra, known for its delightful taste and nutritional benefits. The mix of vegetables, peanuts, and spices truly elevates its flavor. Here’s a simple recipe to whip up this delightful special poha at home.

Ingredients Needed

Ingredients
2 cups of thick poha
1 finely chopped onion
1 small potato, finely chopped
¼ cup green peas
¼ cup peanuts
2 finely chopped green chilies
8–10 curry leaves
1 tsp mustard seeds
½ tsp turmeric powder
1 tsp sugar
Salt to taste
1 lemon
2 tbsp chopped fresh coriander leaves
Sev (crispy chickpea noodles) for garnish
2 tbsp oil

Preparation Steps

Preparation Method
Begin by placing the poha in a colander and rinsing it gently under running water. Avoid soaking it for too long to prevent it from becoming overly soft. After rinsing, mix in the salt and turmeric powder, then let it sit for 10 minutes.

Next, heat oil in a pan. Add the peanuts and roast them until they turn golden brown, then remove them and set aside. In the same oil, add mustard seeds. Once they start to crackle, toss in the curry leaves and green chilies, sautéing for a few seconds.

Add the chopped onion and cook until it becomes light pink. Then, incorporate the potatoes and sauté for about 4–5 minutes. Once the potatoes are nearly tender, add the green peas and cook for an additional 2 minutes, stirring occasionally.

Finally, add the prepared poha to the pan, mixing it well with the other ingredients. Sprinkle in the sugar and cook on low heat for 3–4 minutes, stirring gently to avoid breaking the poha. Once heated through, turn off the heat. Add the roasted peanuts, fresh coriander leaves, and lemon juice, mixing everything together.
