1 teaspoon salt
1 tablespoon sugar
¼ teaspoon turmeric powder
1 teaspoon Eno fruit salt
½ teaspoon carom seeds (ajwain)
½ teaspoon mustard seeds (rai)
1 teaspoon white sesame seeds
8–10 curry leaves


Method to Prepare Dhokla

Method
To start, mix the gram flour, semolina, yogurt, ginger, chopped green chilies, turmeric, salt, and sugar in a large bowl. Gradually add water to form a thick batter. Cover the bowl and let it rest for 10 to 15 minutes to allow the semolina to absorb moisture.

After resting, add 1 teaspoon of Eno to the batter and mix gently, avoiding over-mixing to ensure the dhokla rises well. Lightly grease a tray or steamer plate with oil and pour the batter into it. Heat water in the steamer, place the tray inside, and steam for 10 to 15 minutes. To check for doneness, insert a toothpick; if it comes out clean, the dhokla is ready.
