Beetroot Kebab Recipe

Ingredients for Beetroot Kebabs:
4 medium-sized beetroots
2 boiled potatoes
4 tablespoons gram flour (*besan*) or breadcrumbs
2 onions
2–4 green chilies
1 teaspoon ginger-garlic paste
1 teaspoon coriander powder
1/2 teaspoon *garam masala*
Salt to taste
2 tablespoons finely chopped fresh coriander leaves
Oil for frying

Instructions for making Beetroot Kebabs:

Begin by grating the boiled beetroots and squeezing them to eliminate excess moisture; this step is crucial to prevent the mixture from being too loose when forming the kebabs.

In a large mixing bowl, combine the grated beetroot, mashed potatoes, chopped onions, green chilies, ginger-garlic paste, and fresh coriander.

Next, incorporate the salt and all the dry spices, mixing well. Add the gram flour (besan) or breadcrumbs to help bind the mixture and enhance crispiness.

If the mixture appears too wet, feel free to add a bit more gram flour. Lightly oil your hands and shape the mixture into round or flattened kebabs.

Heat oil in a non-stick pan and cook the kebabs over low to medium heat, flipping them occasionally until they turn golden brown and crispy on both sides.

Alternatively, these kebabs can also be made in an air fryer or oven with minimal oil.

Serve these hot, crispy, and nutritious beetroot kebabs alongside a green coriander-mint chutney or a yogurt-based dip.
