- 500 grams Amla (Indian gooseberry)
- Sugar or Jaggery – to taste
- 1 teaspoon Black salt
- 1 teaspoon Regular salt
- 1 teaspoon Red chili powder
- 1 teaspoon Roasted cumin powder
- 1/2 teaspoon Black pepper powder
- 1/2 teaspoon Chaat masala
- 1 teaspoon Dry ginger powder (Sonth)
Steps to Prepare Amla Candy
Instructions:
1. Begin by washing the amlas thoroughly and then boil them in a pressure cooker for 1-2 whistles until they become tender.
2. After cooling, separate the amla segments and discard the seeds.
3. In a large bowl, combine the amla segments with sugar or jaggery, mixing well. Cover the bowl and allow it to sit for 1-2 days to let the amlas release their juices and absorb the sweetness.
4. Once ready, take the amla segments out of the syrup, spread them on a plate or tray, and let them dry in the sun for 2-3 days, turning them occasionally to ensure even drying. The pieces should remain slightly soft and sticky, not completely hard.
5. Finally, transfer the dried amla pieces to a bowl, add black salt, regular salt, red chili powder, cumin powder, black pepper, chaat masala, and dry ginger powder, and mix thoroughly.
