Dosa batter: 2 to 3 cups
Chopped onion: 1 large
Chopped tomato: 1 large
Chopped capsicum (bell pepper): 1 small
Grated carrot: ½ cup
Chopped green chilies: 2
Chopped fresh coriander: ½ cup
Salt: To taste
Oil or butter: For cooking the *Uttapam*
Podi masala: 1 teaspoon


Step-by-Step Cooking Instructions

Method for making *Uttapam*:

Begin by combining all the chopped vegetables in a large bowl. Add a pinch of salt and a bit of *Sambar masala* to enhance the flavor of the vegetables.

Next, heat a non-stick or iron *tawa* (griddle) over medium heat. Lightly grease the *tawa* with oil and wipe it clean with a damp cloth.

Pour a generous ladleful of batter into the center of the *tawa*. Unlike *dosa*, *Uttapam* should be thicker, so avoid spreading it too thin; simply shape it into a small circle.

Immediately sprinkle the vegetable mixture evenly on top of the batter. Use a spatula to gently press the vegetables down, ensuring they adhere to the batter and won’t fall off when flipped.

Drizzle a little oil or butter around the edges and on top of the *Uttapam*. Maintain the heat at low to medium. Once the bottom is golden and crispy, carefully flip it over. Allow the vegetables to cook slightly on the other side for an additional 1–2 minutes.

Once cooked, remove the *Uttapam* from the pan, sprinkle some Podi masala on top, and serve it with spicy coconut chutney, tangy tomato-onion chutney, or hot sambar.
