3-4 medium potatoes
4 tablespoons poppy seeds (*Poshto*)
3-4 green chilies
1/2 teaspoon nigella seeds (*Kalonji*)
1 dried red chili
1/4 teaspoon turmeric powder
3-4 tablespoons mustard oil
Salt to taste


Step-by-Step Method to Prepare Aloo Poshto

Begin by soaking the poppy seeds in warm water for about 20-30 minutes to soften them for grinding.

After soaking, drain the seeds and blend them with two green chilies and a couple of tablespoons of water until you achieve a smooth paste. In a pan, heat 2-3 tablespoons of mustard oil over high heat until it starts to smoke slightly. Add the chopped potatoes and sauté for 3-4 minutes before removing them from the pan.

In the same oil, toss in the nigella seeds and the dried red chili, allowing them to splutter. Then, return the sautéed potatoes to the pan, adding salt and turmeric powder to taste, and mix thoroughly.

Cook the mixture for 1-2 minutes, then incorporate the prepared *poshto* paste.

Reduce the heat immediately after adding the paste, mixing it well with the potatoes and stirring for 2-3 minutes.

Pour in half a cup of water using the bowl that held the *poshto* paste to ensure all of it is used.

Cover the pan and let it simmer on low heat for 7-8 minutes.

Once the potatoes are tender and the gravy has thickened to a semi-dry consistency, remove the lid. Add two slit green chilies and a teaspoon of mustard oil on top.

Finally, turn off the heat and serve the *Aloo Poshto* hot.
