The thought of Aloo Kulcha is enough to make anyone's mouth water. While the classic Chole-Kulcha is undeniably tasty, Aloo Kulcha elevates the dining experience. This dish features a spiced potato filling, lavishly coated in butter, and served alongside spicy chole (chickpea curry), creating a truly satisfying meal.


Making Aloo Kulcha at Home


Many believe that preparing Aloo Kulcha at home is a daunting task, but it is actually quite simple. Here’s how you can make it yourself.

Ingredients:
2 cups all-purpose flour (Maida)
3 tbsp yogurt (Curd)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp sugar
2 tbsp oil/ghee
Salt to taste
3-4 boiled and mashed potatoes
1 finely chopped onion
2 green chilies
1 tsp grated ginger
Fresh coriander leaves, finely chopped
1/2 tsp red chili powder
1/2 tsp garam masala
1 tsp dry mango powder (Amchur) or dried pomegranate seeds (Anardana)
1 tbsp dried fenugreek leaves (Kasuri Methi)
1 tsp nigella seeds (Kalonji)
Butter as needed


Preparation Method

Begin by sifting the all-purpose flour into a bowl. Incorporate salt, sugar, baking powder, baking soda, yogurt, and two tablespoons of oil, mixing thoroughly. Knead this mixture into a soft dough using lukewarm water, lightly oil the surface, cover it, and let it rest for an hour.


In a separate bowl, combine the boiled and mashed potatoes with chopped onion, green chilies, ginger, coriander, red chili powder, dry mango powder, garam masala, dried fenugreek leaves, and salt. Form this mixture into small balls for stuffing.


Take a portion of the rested dough and flatten it slightly. Place a potato stuffing ball in the center and seal it by gathering the edges.


Dust the dough ball with a bit of dry flour and roll it out into an oval or round shape using a rolling pin. Sprinkle fresh coriander and nigella seeds on top, pressing lightly to ensure they stick.



Flip the kulcha and wet the other side with water before placing it on a hot tawa (griddle) with the wet side down.


Once small bubbles form on the kulcha, flip the tawa and cook the kulcha directly over the flame.


After cooking, remove the kulcha from the tawa, brush it with butter, and serve it with chhole (spicy chickpea curry) and chopped onions.
