Discover the Delight of Aloo Chop

If you're tired of the same old snacks, now is the ideal moment to explore something fresh and exciting. Today, we present a delightful recipe inspired by the vibrant streets of Bihar—'Aloo Chop', a dish that will elevate your evening tea experience.

Aloo Chop is characterized by its crunchy outer layer and a soft, spiced potato filling. The best part? It's incredibly simple to prepare, and you probably have all the spices you need right in your kitchen. Let’s dive into this easy recipe.

**Ingredients Needed for Aloo Chop**
4 to 5 boiled potatoes
1 cup gram flour (besan) for the batter
1 finely chopped onion
2 green chilies (finely chopped)
1 teaspoon ginger-garlic paste
2 tablespoons fresh coriander leaves (finely chopped)
½ teaspoon turmeric powder
½ teaspoon red chili powder (adjust to taste)
½ teaspoon roasted cumin powder
½ teaspoon garam masala
1 teaspoon dry mango powder (amchur) or chaat masala for tanginess
Salt to taste
Oil for deep frying

**Simple Steps to Prepare Aloo Chop**
Start by peeling the boiled potatoes and mashing them well in a bowl, ensuring there are no large lumps. In a pan, heat a little oil and sauté the chopped onion, green chilies, and ginger-garlic paste until they turn a light golden color.

Next, incorporate the mashed potatoes along with salt, turmeric, red chili powder, cumin powder, garam masala, and chaat masala. Mix thoroughly and sauté for about 2 minutes. Turn off the heat, add the fresh coriander leaves, and allow the mixture to cool. Once cooled, shape the mixture into small, round patties.

In a separate bowl, prepare the gram flour batter by mixing it with a pinch of salt, turmeric powder, and red chili powder. Gradually add water while whisking to achieve a thick, smooth consistency. Ensure the batter is not too runny to coat the potato patties effectively.
Heat oil in a deep pan. Once hot, lower the heat to medium. Dip each potato patty into the batter, ensuring they are well-coated, and gently place them into the hot oil.

Fry the patties, turning occasionally, until they are golden brown and crispy. Once done, remove them and place on a paper towel to absorb excess oil.

Your hot and scrumptious Aloo Chop is now ready to be served! Pair it with a spicy green coriander-mint chutney or tomato ketchup, and enjoy it with a robust cup of ginger tea. Trust me, once your family tries this, they will forget all about samosas and pakoras.
