On the inaugural day of Navratri, devotees pay homage to Goddess Shailputri. It is said that she has a special affinity for white sweets made with *ghee* (clarified butter). Therefore, offering *Khoya Barfi* (a sweet made from solidified milk) is a cherished tradition. Here’s how to prepare it.

Ingredients:
Khoya (Mawa): 500 grams
Sugar: 250 grams
Pure Desi Ghee: 2 tablespoons
Cardamom powder: 1 teaspoon
Chopped cashews and almonds: 2 tablespoons
Silver leaf (*Chandi ka Vark*)
Preparation Method:
Begin by heating a heavy-bottomed pan (*kadhai*) over medium heat.
Add the fresh *khoya* and roast it for about 5–7 minutes, stirring continuously.
When the *khoya* emits a pleasant aroma and separates from the pan's sides, lower the heat.
Incorporate the powdered sugar into the roasted *khoya*, stirring constantly until the mixture becomes slightly runny.
Add the pure *desi ghee* and mix thoroughly.
Once the mixture is well-cooked and resembles kneaded dough, add the cardamom powder and turn off the heat.
Spread the mixture onto a plate or tray, garnishing with chopped nuts and silver leaf. Press gently and allow it to cool for 1–2 hours. After cooling, cut into barfi shapes. Your delicious barfi is now ready to enjoy.
