Badam Puri Recipe
This classic sweet from Karnataka resembles a puri and is known for its exceptional taste. Perfect for the winter season, it not only warms the body but also delights the palate.
Ingredients (Serves 4)
1 cup Maida
1/4 cup Semolina
A pinch of Baking soda
1/2 teaspoon Salt
1 teaspoon Sugar
1/4 cup Milk
20 Almonds (soaked and ground into a paste)
12-15 Cloves
Oil (for frying)
Syrup Ingredients:
1 cup Sugar
1 cup Water
2 crushed Cardamom pods
Instructions:
Prepare the Almond Paste
Soak almonds in hot water for 15 minutes, peel, and blend into a smooth paste.
Kneading the Dough
In a bowl, mix flour, semolina, baking soda, salt, and sugar. Add a bit of oil and the almond paste. Gradually incorporate milk and knead into a soft dough. Cover and let it rest for 10 minutes.
Making the Syrup
Combine sugar, water, and cardamom in a pan, and cook over medium heat until the syrup thickens slightly.
Shaping the Puris
Divide the dough into small balls. Roll each into a circle, brush with oil, fold, and then fold again to create a triangle. Insert a clove in one corner.
Frying and Syrup Dipping
