Traditionally made with refined flour, our version uses wheat flour, making it not only scrumptious but also a healthier option. Plus, it's quite simple to prepare. So, let’s dive into this fantastic recipe!
Ingredients for Malpua
Wheat flour: 1 cup
Semolina: 2 tablespoons
Sugar: 1/2 cup (for batter) + 1 cup (for syrup)
Milk: 1 cup (or as needed for batter)
Cardamom powder: 1/2 teaspoon (to taste)
Fennel seeds: 1 teaspoon
Oil/ghee for frying
Water: 1 cup (for syrup)
Malpua Preparation Method
Step 1: Prepare the Batter
In a large mixing bowl, combine wheat flour, semolina, 1/2 cup sugar, cardamom powder, and fennel seeds.
Gradually add milk to create a thick, smooth batter, ensuring there are no lumps.
The batter should be pourable but not too runny or too thick.
Cover and let it rest for at least 30 minutes to allow the semolina to swell, which will help make the malpuas crispy.
Step 2: Make the Syrup
In a saucepan, combine 1 cup of sugar with 1 cup of water.
Heat until the sugar is fully dissolved.
A slightly sticky syrup is ideal; avoid making it too stringy. Set aside once done.
Step 3: Fry the Malpuas
In a deep, wide pan, heat oil or ghee.
Once the ghee is moderately hot, use a rounded spoon to scoop the batter and gently pour it into the hot ghee.
It will naturally form a round shape. Fry 3 to 4 malpuas at a time, depending on the pan size.
Cook until they turn golden brown on both sides.
Step 4: Dip and Serve
After frying, remove the malpuas from the oil and immerse them in the lukewarm syrup for 5 to 10 minutes.
Then, take them out of the syrup.
Top the warm malpuas with chopped almonds, pistachios, or saffron.
